Quick & Easy Greek Salad

Ingredients:

2 large cucumbers

2 large tomatoes

1 yellow bell pepper

1 red bell pepper

1/2 red onion, sliced thin

1/2 cup Kalamata olives, halved

1/2 cup Feta Cheese

Dressing:

1 clove garlic, minced

1/2 cup extra virgin olive oil

3 T Red Wine Vinegar

1 T Lemon Juice (fresh is best)

1/2 tsp Dijon Mustard

1 tsp Dried Oregano

1/2 tsp salt

Ground Black Pepper to taste

Mix all ingredients together in a covered glass jar.

Directions:

Mix all salad ingredients together in a large bowl. Toss lightly with dressing prior to serving.
