Spinach and Strawberry Salad

Ingredients:

10 ounces of fresh baby spinach, washed and dried

1 quart of fresh strawberries, quartered

1 cup Feta Cheese

1/2 red onion, sliced thin

1/4 cup pecan, almond or walnut pieces

Dressing:

1/2 cup extra virgin olive oil

1/4 cup Balsamic Vinegar

1/2 cup sugar (can use less if desired)

1 T poppy seeds

1 T finely minced red onion

Combine all ingredients in a covered mason jar.

Directions:

Combine all salad ingredients together in a large bowl and toss with dressing prior to serving.

Enjoy!
